Protein Rice Krispie Treats
These protein rice krispie treats are a huge hit in my house. They're a tasty dessert style snack with extra protein added to help you and your family up your protein intake in a sneaky (but fun) way. I love a good rice crispy treat. Not only do they bring me back to my childhood, but they're also just pure comfort. Every time I go to Disneyland, I always get a rice treat (it's also usually coated in chocolate or peanut butter). With that being said, I wanted to make protein rice crispies so they would provide me with a little more protein to help me reach my nutrition goals (while still enjoying myself).
In large pot over low heat, melt the butter.
Once it's melted, add the mashmallows and stir often until it's smooth and all lumps are gone. Remove from heat.
Add the protein powder in and stir (working quickly as the marshamllows are getting tougher).
Finally, add in the Rice Krispies and mix until combined.
Spray a 9x13 pan with cooking oil (I use avocado oil spray) and the back of your spoon. Transfer the mixture to the pan and press into it with the back of the spoon or use your hands if it's sticking too much. Let set for 1-2 hours.
